This wine is made with grapes from two farms far from each other and located in the southern and northern areas of the Ribeiro region, in the Toén and Ribadavia municipalities. A part of the grapes comes from a 6,000-meter farm, where it ripens very well and very quickly. To counteract this excess ripening, we mix a good part of Albariño from a smaller farm. Manual harvest, crushed and destemmed, maceration at room temperature, manual pressing in a vertical press, controlled spontaneous fermentation with cold, aging on lees for three months, the grapes from each farm ferment separately and then are mixed at the end of the elaboration, they are filtered through plates and bottled. This vintage was bottled between May 25 and 26, 2016, flower day and root part.
